1/3 cup rolled oats (finely ground)
1 small egg
1/2 cup onion (finely grated)
2 garlic cloves (minced)
1 tsp dried oregano
1 tsp smoked paprika (optional)
1/2 tsp sea salt
1/4 tsp black pepper
1 tbsp olive oil
2 tbsp unsalted butter
1/2 cup onion (diced)
2 garlic cloves (minced)
1/3 cup all-purpose flour
3 cups low-sodium vegetable broth
1 tsp apple cider vinegar
1/2 tsp ground nutmeg

Instructions

Preheat oven to 400°F (200°C)
Combine turkey, oats, egg, grated onion, garlic, oregano, paprika, salt, and pepper in a bowl
Mix gently until just combined; avoid overworking the meat
Form mixture into 18 golf ball-sized meatballs
Place on parchment-lined baking sheet with space between each
Bake 20-25 minutes until browned and cooked through
While meatballs bake, melt butter in a skillet over medium heat
Sauté diced onion and garlic until softened
Add flour and cook 1-2 minutes
Gradually whisk in vegetable broth until smooth
Bring to simmer, stirring constantly until thickened
Stir in apple cider vinegar and nutmeg
Adjust seasoning as needed
