6 cups fresh onion slices (1 large white onion)
1 Tbsp olive oil
1 tsp sugar
Ground turkey or beef (1 lb)
1 tbsp nutritional yeast (optional)
1 egg (or 2 tbsp unsweetened applesauce)
Salt and pepper
1 cup water or vegetable broth (for deglazing)
Optional: grated carrots (2 tbsp) or minced chives
Preheat oven to 375°F (190°C). Heat 1 tsp olive oil in a skillet; cook onions 10-12 minutes until golden, adding sugar after 5 minutes. Set aside.
Combine turkey, egg substitute, nutritional yeast, salt, and pepper in a bowl. Mix gently. Press crusted onion slices onto patties.
Place on parchment-lined baking sheet and bake 18-20 minutes (internal temp 160°F).
After 15 minutes, deglaze skillet with broth. Simmer 5 minutes, then ladle sauce over patties for last 5 minutes of baking.
Add grated carrots or chives in step 2 for extra moisture.
Use coconut oil-based ‘butter’ substitute in deglazing liquid for richness.
Freeze unbaked patties (un-breaded) for up to 3 months—bake thawed.
