Ingredients

Scale

1 lb (450g) 93% lean ground beef
1 (14.75-oz) box Hamburger Helper™ classic cheese blend
1½ cups (150g) frozen mixed vegetables (corn, peas, carrots)
1 medium onion, finely chopped
1 bell pepper, diced (optional)
1 tbsp olive oil
Salt and black pepper to taste

Instructions

Prep ingredients: Dice onion, bell pepper (if using), and measure Hamburger Helper packet.
Heat olive oil in a skillet over medium heat. Cook ground beef until browned, draining excess fat.
Add onion and bell pepper; sauté 3-4 minutes until softened.
Stir in Hamburger Helper mix and frozen vegetables. Cook 2 minutes.
Pour in cheese packet. Cook 5 minutes, stirring constantly until thickened.
Season with salt and pepper. Add 2–3 tbsp water/milk if desired for looseness.

Notes

Add black beans (drained/rinsed) for protein/fiber.
Substitute cheese packet with 1/3 cup nutritional yeast + 1 tbsp tomato paste for vegan version.
Optional: Pair with side salad or whole-grain rolls.
