If using fresh peaches, peel and slice them. Toss with ½ cup sugar and a sprinkle of cinnamon. Let them sit for 10 minutes to release their juices.
In a bowl, whisk together flour, remaining sugar, baking powder, and salt. Stir in the milk, vanilla, and melted butter until smooth.
Pour the batter into a greased 9×13-inch baking dish. Spoon the peaches (with juices) evenly over the batter. Don’t stir! The batter rises around the fruit as it bakes.
Bake at 350°F (175°C) for 40–45 minutes, until the top is golden brown and a toothpick inserted in the crust comes out clean.
