1 lb lean ground beef (90% lean)
8 oz whole wheat pasta (olive-shaped or bowtie)
3 cloves garlic, minced
1 tsp seasoned salt (or Italian seasoning blend)
10.5 oz mushroom soup (homemade or low-sodium store-bought)
15 oz tomato sauce (unsweetened, no added sugar)
2 cups shredded cheddar or mozzarella cheese (reduced-fat optional)
14.5 oz diced tomatoes (fire-roasted preferred)
2 cups Italian chopped salad mix (optional)

Instructions

Cook whole wheat pasta according to package instructions. Set aside.
Heat a skillet over medium heat and sauté minced garlic in olive oil until fragrant.
Add lean ground beef to the skillet and cook over medium-high heat, breaking into small pieces until browned and no longer pink. Season with salt and pepper.
Stir in mushroom soup and tomato sauce. Simmer for 5 minutes.
Add diced tomatoes and shredded cheese. Cook until the cheese is melted and the sauce is thickened.
Toss the cooked pasta into the skillet and mix well until the pasta is fully coated.
If using, stir in Italian chopped salad mix for added freshness.
Serve hot.
