A rich, cheesy layer of ground beef, onions, and savory condiments topped with a crisp whole-grain crust. Combines the essence of a classic cheeseburger with casserole comfort—perfect for busy weeknights.
1 lb lean ground beef (85% lean recommended)
1 small onion, chopped
2 cloves garlic, minced
1 cup shredded reduced-fat cheddar cheese
2 tbsp unsalted butter or plant-based alternative
1/3 cup low-fat mayonnaise
1/4 cup ketchup (low-sugar preferred)
1 tsp mustard
1 tsp relish (optional)
1/2 tsp salt
1/4 tsp black pepper
2 whole grain dinner rolls, crumbled (2 cups)
1 tbsp olive oil (optional, for greasing)
Preheat oven to 375°F (190°C).
Crumble whole grain dinner rolls into a bowl; set aside.
Cook lean ground beef in an oven-safe skillet over medium heat until browned. Drain excess fat if desired.
Stir in chopped onion and garlic; cook until softened (5-7 minutes).
Add ketchup, mustard, relish, 1/3 cup low-fat mayonnaise, salt, and pepper. Simmer 2-3 minutes.
Sprinkle shredded cheddar cheese over the beef mixture.
Sprinkle crumbled dinner rolls on top to form a crust.
Optionally brush olive oil over the top for extra browning.
Bake 25-30 minutes until golden brown and bubbly.
Let rest 5-10 minutes before serving.
Substitute plant-based meat for a vegetarian version.
Use gluten-free dinner rolls if necessary.
Storage: Refrigerate leftovers in an airtight container for up to 3 days.
For extra crispness, broil the casserole for 2-3 minutes at the end of baking.
