1 ½ lbs ground beef
1 tbsp olive oil
1 medium onion, diced
4 cloves garlic, minced
28 oz crushed tomatoes
15 oz tomato sauce
2 tbsp tomato paste
1 tbsp sugar
1 tsp dried oregano
1 tsp dried basil
1 tsp salt
½ tsp black pepper
¼ tsp red pepper flakes (optional)
½ cup water or broth
15 oz ricotta cheese
1 large egg
½ cup grated parmesan
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
12 lasagna noodles, cooked al dente
4 cups shredded mozzarella

Heat olive oil in a large skillet over medium heat. Sauté onions until translucent, then add garlic until fragrant.
Add ground beef, breaking it apart with a spatula, and cook until browned.
Stir in crushed tomatoes, tomato sauce, tomato paste, sugar, oregano, basil, salt, pepper, red pepper flakes (if using), and water/broth. Simmer on low for 20–30 minutes until thickened.
In a bowl, combine ricotta, egg, parmesan, Italian seasoning, salt, and pepper for the cheese filling.
Assemble the lasagna in a 9×13-inch baking dish: spread a thin layer of beef sauce, top with noodles, cheese filling, mozzarella, and repeat layers. Finish with a top layer of sauce, mozzarella, and parmesan.
Cover and bake at 375°F (190°C) for 25–30 minutes. Uncover and broil for 2–3 minutes until golden. Garnish with parsley and serve.
Beef sauce can be made up to 3 days in advance. For a meat-free version, substitute ground beef with mushrooms. Use gluten-free lasagna noodles for dietary restrictions. Let rest 10–15 minutes before slicing to avoid messy layers.
