1 cup dark brown sugar
2 cups all-purpose flour
1/2 tsp salt
2 tsp baking powder
1 tsp ground cinnamon
1/4 tsp ground allspice
1/8 tsp ground nutmeg
2 large eggs
3/4 cup vegetable oil
1/4 cup milk
1 1/2 cups diced peeled peaches

Instructions

Preheat oven to 350°F (175°C)
Grease a 9×5-inch loaf pan with butter. Dust pan with sugar for browning
In a large bowl, whisk together flour, salt, baking powder, brown sugar, cinnamon, allspice, and nutmeg
In a separate bowl, whisk eggs until frothy. Add oil and milk, blending until smooth
Gradually mix wet ingredients into dry ingredients until just combined
Gently fold in diced peaches by hand to preserve fruit texture
Transfer batter to prepared pan. Level surface with an offset spatula
Bake 45-50 minutes until golden and toothpick comes out clean
Cool in pan 10 minutes, then transfer to a wire rack to cool completely

Notes

For optimal browning, avoid using parchment paper when greasing the pan
Customize with 1/3 cup chopped walnuts or swap peach puree for traditional jam
