2 tablespoons olive oil
pounds boneless, skinless chicken breasts, cut into bite-sized pieces
½ teaspoon black pepper
½ teaspoon Italian seasoning
½ teaspoon paprika
2 tablespoons butter
½ cup sun-dried tomatoes in oil, drained and thinly sliced
3 teaspoons minced garlic
1 cup low-sodium chicken broth
2 cups heavy cream
1 teaspoon Italian seasoning
1 teaspoon black pepper
1 teaspoon paprika
1 cup finely shredded Parmesan cheese
2 cups chopped baby spinach
Fresh parsley or basil, chopped (for garnish)

Instructions

Season chicken with black pepper, Italian seasoning, and paprika
Heat olive oil in a skillet over medium-high heat and brown the chicken (5–7 minutes)
Remove chicken and set aside
Reduce heat to medium, melt butter, then sauté garlic for 1 minute
Add sun-dried tomatoes and cook 2 minutes more
Pour in broth, scrape up browned bits, then stir in cream, seasonings, and Parmesan
Simmer gently, avoiding boiling
Add frozen tortellini to the skillet, cover, and simmer 8–10 minutes until tender
Stir in spinach and cook until wilted
Remove from heat and garnish with fresh herbs

Notes

Frozen tortellini does not need thawing—simmer directly in the sauce
