¼ cup olive oil
2 tbsp minced fresh oregano (or 1 tbsp dried Italian seasoning)
2 tbsp minced thyme
2 tbsp minced rosemary
1 tsp sea salt
1 tsp black pepper
2 cloves garlic, minced
2 lbs chicken thighs or breast (boneless or bone-in)
Whisk marinade: In a bowl, combine lemon juice, olive oil, oregano, thyme, rosemary, salt, pepper, and garlic until well blended.
Marinate chicken: Add chicken to a shallow dish, pour marinade over it, and flip to coat evenly. Seal and refrigerate for 30 minutes to 24 hours.
Cook choice:

Or Grill over medium heat, flipping halfway through (10–35 min depending on cut).
Rest chicken 5–10 minutes before serving.

Marinate up to 24 hours for maximum flavor.
