A savory quiche with smoky turkey bacon, sharp cheddar, and spinach cradled in a golden flaky crust. Perfect for brunch, lunch, or meal prep.

Ingredients

Scale

9-inch unbaked pie crust (store-bought or homemade)
6 slices turkey bacon, cooked and crumbled
1 cup shredded cheddar cheese (about 4 oz)
1/4 tsp salt
1 cup baby spinach, roughly chopped
Freshly ground black pepper, to taste
5 large eggs (room temperature)
1 cup half and half
2–3 tbsp hollandaise sauce (egg yolk, butter, lemon juice, optional)

Instructions

Cook turkey bacon in a skillet over medium heat 8–10 minutes. Drain on paper towels and crumble.
Preheat oven to 400°F. Line pie crust with parchment paper and weights. Bake 10–12 minutes, then remove weights and paper and bake 5–7 more minutes.
Distribute crumbled turkey bacon in the crust. Layer with cheddar and spinach.
Whisk eggs, half and half, salt, and pepper 1–2 minutes. Fold in hollandaise (if using).
Reduce oven to 375°F. Pour custard into crust, filling to 1/2 inch from the rim. Bake 35–45 minutes until custard sets but slightly jiggles.
Let rest 10 minutes before slicing.

Notes

Pre-bake crust (blind bake) to prevent sogginess.
Substitute spinach with kale, zucchini, or diced onions.
Store slices in an airtight container for up to 5 days.
Hollandaise is optional but recommended for a rich finish.
