4 slices Ezekiel bread
2 eggs
½ cup coconut milk or unsweetened almond milk
2 tbsp coconut sugar
1 packet stevia
1 tsp pure vanilla extract
1 pinch salt
½ tsp cinnamon (optional)
Whisk eggs, coconut milk, coconut sugar, stevia, vanilla, salt, and cinnamon in a large bowl until smooth.
Submerge bread slices in the custard for 15–20 seconds on each side.
Heat a nonstick skillet over medium-low heat (300°F/150°C) and add coconut oil if desired.
Cook each bread slice for 4–5 minutes per side until golden and crisp.
Serve immediately with berries, low-sugar syrup, or nuts.
Use gluten-free Ezekiel bread for a gluten-free version.
