8 boneless, skinless chicken breasts (about 2 lbs)
2/3 bunch fresh cilantro (about 3/4 cup chopped)
Zest of 1 lime
3 tablespoons lime juice, about 2 limes
3 cloves garlic, chopped
1 teaspoon ground coriander
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil

Combine cilantro, lime zest, lime juice, garlic, coriander, salt, black pepper, and olive oil in a blender until smooth.
Place chicken breasts in a sealable bag, add marinade, and press to coat thoroughly.
Refrigerate for 1 hour minimum or overnight for best results.
Preheat grill or a heavy-bottomed pan over medium-high heat. Brush with oil to prevent sticking.
Grill chicken for 6–8 minutes per side, until internal temperature reaches 165°F.
