¼ cup ghee or unsalted butter, divided
1 tablespoon olive oil
1 lb Yukon gold potatoes, cut into ½-inch cubes
3 garlic cloves, minced
1 teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon sea salt, plus more to taste
¼ teaspoon ground black pepper, plus more to taste
1 ¼ lb sirloin steak, cut into ½-inch cubes

Instructions

Preheat the skillet: Heat a large cast iron skillet over medium heat. Add the olive oil and 2 tablespoons of the ghee. Once melted, proceed to cooking the potatoes.
Cook the potatoes: Add the cubed potatoes to the skillet and evenly distribute the garlic, thyme, oregano, salt, and pepper. Cook undisturbed for 2-3 minutes, then stir frequently (every 1-2 minutes) to ensure golden browning and tenderness. Remove the potatoes with a slotted spoon and set aside.
Sear the steak bites: Increase the heat to medium-high and add the remaining 2 tablespoons of ghee. Once melted, add the steak cubes and season with additional salt and pepper. Cook for at least 4-5 minutes, searing until browned and nearly cooked through, then reduce to medium heat and cook until the steak is fully cooked (internal temperature of 145°F). Return the potatoes to the skillet for 2-3 minutes to heat through and absorb the steak flavors.
Finish: Taste and adjust seasoning as needed. Serve directly from the skillet with thyme and oregano garnish if desired.
