A summer dessert featuring a buttery brown sugar cookie crust topped with tangy cream cheese frosting and vibrant seasonal fruit. Adaptable, make-ahead, and perfect for parties.

Ingredients

Scale

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/2 cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 (8 ounce) package low-fat cream cheese
2–3 tablespoons maple syrup or honey (or 1 cup powdered sugar)
1 teaspoon vanilla extract
Pinch of fine sea salt
Fresh strawberries (or other seasonal fruits like blueberries, raspberries, blackberries)
Optional: Fresh honey, for drizzling

Instructions

Preheat oven to 350°F. Grease a quarter sheet pan, 9×13-inch baking dish, or 12-inch round pizza pan.
Whisk together flour, baking powder, and salt in a medium bowl. Set aside.
Beat softened butter and brown sugar in a large bowl until light and fluffy (2 minutes). Add egg, vanilla, and almond extract; mix until combined.
Gradually add dry ingredients on low speed until just combined. Avoid overmixing.
Press dough evenly into the prepared pan. Use a fork to poke holes in the dough to prevent air bubbles.
Bake for 15–18 minutes until golden brown. Cool for 20 minutes on a wire rack.
While crust cools, whisk cream cheese, sweetener (maple syrup/honey or powdered sugar), vanilla extract, and sea salt until smooth.
Spread frosting evenly over cooled crust. Top with fresh sliced fruit.
For best results, assemble just before serving. Drizzle with additional honey if desired.

Notes

Use any seasonal fresh fruit for toppings.
Frosting can be made ahead and refrigerated for 1–2 days.
Substitute maple syrup for cream cheese to make it lactose-free.
Serves 10–12 people.
