4 boneless, skinless chicken breasts
1 ½ cups freshly grated parmesan cheese
½ cup all-purpose flour or gluten-free flour
2 tbsp unsalted butter or olive oil
4 cloves garlic, minced
1 cup whole milk
2 cups heavy cream
1 tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
Optional: chopped fresh thyme for garnish

Instructions

Season chicken breasts with ½ tsp salt and pepper
Dredge chicken in flour, shaking off excess
Heat skillet with butter or oil over medium heat
Cook chicken 4-5 minutes per side until golden; set aside
Add garlic to the same skillet and sauté for 1 minute
Mix in 1 tbsp parmesan and remaining flour to form a roux
Gradually whisk in milk and cream; simmer, stirring constantly
Add remaining parmesan, Italian seasoning, and ½ tsp salt
Simmer 3-5 minutes until sauce thickens
Return chicken to the sauce and cook 2-3 minutes

For vegetarian version, substitute chicken with zucchini or eggplant and skip cooking step for chicken
