Ingredients

Scale

4 boneless, skinless chicken breasts
1/4 cup olive oil
Juice of 2 limes
2 tablespoons chili powder
1 tablespoon garlic powder
1 teaspoon ground cumin
1 teaspoon paprika
Salt and pepper to taste
Fresh cilantro for garnish (optional)

Instructions

Whisk olive oil, lime juice, chili powder, garlic powder, cumin, paprika, salt, and pepper to make the marinade
Place chicken breasts in a resealable bag or shallow dish, pour in marinade, seal/cover, and refrigerate for 30 minutes to 4 hours
Preheat grill or stovetop pan to medium-high heat; add additional olive oil if using a pan
Cook chicken 6-7 minutes per side until internal temperature reaches 165°F (75°C), avoiding frequent flipping to develop a sear
Transfer chicken to a plate and let rest for 5 minutes to lock in juices
Slice into thick pieces or serve whole; garnish with optional cilantro

Notes

Marinate the chicken for up to 4 hours for optimal flavor
Spritz with extra lime juice at the table for added brightness
Use avocado oil as a swap for olive oil (better heat retention on the grill)
Store leftovers in an airtight container in the refrigerator for up to 4 days
