This juicy, tender grilled chicken is marinated in a zesty blend of balsamic vinegar, olive oil, garlic, and herbs. A low-calorie, no-alcohol recipe that delivers bold flavor with a 30-minute prep or less, ready for weeknights, barbecues, or meal prepping.

Ingredients

Scale

4 boneless skinless chicken breasts (or 4 bone-in thighs for extra juiciness)
¼ cup olive oil
4 tablespoons balsamic vinegar
2 tablespoons brown sugar or honey
1 tablespoon soy sauce
1 teaspoon minced garlic
1 teaspoon Italian blend herbs or Herbes de Provence
A pinch of red pepper flakes (optional)

Instructions

Combine olive oil, balsamic vinegar, brown sugar, soy sauce, garlic, herbs, and red pepper flakes in a large ziplock bag.
Add chicken breasts (or thighs) to the marinade, seal, press out air, and chill for at least 30 minutes (up to 4 hours).
Preheat grill or stovetop pan. Lightly oil the surface and heat to medium.
Grill chicken for 6-10 minutes per side, adjusting based on thickness.
Discard unused marinade. Check internal temperature with a thermometer (165°F). Rest for 5 minutes before slicing.

Notes

Substitute chicken thighs for breasts for extra juiciness
Marinating longer enhances flavor
Can use a stovetop pan instead of a grill
Pair with grilled vegetables, salads, or grain bowls for a complete meal
